About this course

The first year is an ideal starter if you wish to start training to work in the hospitality and catering industry. In the second year you will gain a high standard of cookery and service skills and learn other workplace essentials including customer service and kitchen health and safety. You will learn in our commercial kitchen and fine dining restaurant Aspire working with paying customers.

Full-time students aged 16-18 will follow a study programme at City College which includes:

  • The main subject qualification
  • Work experience which is effective, relevant, and includes careers fairs, site visits, guest speakers and introduces you to the expectations of the real demands of work
  • English and maths, where students have not yet achieved a GCSE grade 9-4/A*-C in these subjects by age 16
  • Additional activities, such as tutorials and work-related learning, to help further develop the personal skills relevant to your progression goals

These four elements should combine to provide stretch and challenge to prepare you for progression to employment or further study.

What you will learn

Year 1

  • A range of cookery methods including baking, roasting, steaming, boiling, braising, stewing and frying
  • Food and beverage service skills
  • Barista skills
  • Cook and serve food in Aspire Restaurant
  • Taking bookings and payments
  • Customer service skills
  • Food safety

Year 2

  • How to prepare and cook a range of products including fish, meat, vegetables, soups, pastry as well as hot and cold desserts
  • Menu knowledge and design
  • Food and beverage service skills
  • Customer service skills
  • Cook and serve food in Aspire Restaurant

If you successfully complete the first year of study you will gain a level 1 Certificate qualification. In order to progress to the second year you will need to pass the first year of study.

Our modern commercial kitchens and commercial fine dining restaurant (Aspire) will provide you with the perfect place to learn your trade in this industry. Gain valuable experience of working in the restaurant and at catering events that will build your CV and enhance your employability.

Entry requirements

Direct entry to year 2

4 GCSEs 9-3/A*–D (including English and maths) AND
Level 1 in Hospitality & Catering

Entry to year 1

4 GCSEs 9-2/A*-E (including English and maths) 

You will be required to attend an interview at the College prior to enrolling onto this course.
